¿What Is Elote?
In Spanish, “elote” translates to corn on the cob. However, elote is also considered a general term for Mexican Street Corn, a beloved street food favorite, consisting of corn, lathered in mayo, sprinkled with lime juice, coated with cotija cheese, and a special blend of chile powder and spices.
Elote or Mexican Street Corn is extremely versatile. It can be prepared in numerous ways and has many different names.
For example, Elote en Vaso and Esquites both refer to elote that is cut off the cob and placed in a cup. Esquites can also indicate that the elote was cooked in a broth instead of water.
The panchita’s elotes story
The first time that I tasted elotes was an amazing moment I will never forget. I was hosting a barbecue, and my sister-in-law offered to make her abuela’s elote recipe. From the first bite, it was the perfect blend of incredible flavors and I was addicted.
The next day, I was already craving elotes and decided to go to the grocery store to find some. I searched the entire grocery store and almost cried because I could not find any type of kit or premade elotes.
I could not believe that a quick and convenient option didn’t exist. I became determined to find a way that I could quickly enjoy elotes without the mess or time needed to make it from scratch. I started testing different recipes by cooking elote every single day. My determination became an obsession to create an authentic recipe that was also convenient.
About a year into my elote journey, I was snooping around the freezer section at the grocery store and started jumping with joy when I finally found premade elotes. I thought to myself, this is the answer I have been looking for. The excitement quickly faded as my tastebuds were overwhelmed with disappointment. This was not the elote I fell in love with.
I became even more motivated to create an elote that was both quick and convenient but most importantly tasted authentic. After hundreds of recipe changes, and sourcing different types of ingredients, friends and family became obsessed and started to constantly request my elotes. I knew that the recipe was ready after my friend’s abuela offered to buy my elotes. She actually came up with the name Panchita’s Elotes.
